I have a few ships dotted around space and was wondering if there is any way to tell which ship is in which station?.

Have a look inside the Shipyard, if the station have it. There is a Tab that shows your ships and where they are locatet.

Theres also icons on the galaxy map (red with a little ship graphic), though it does not actually say which ship it is.
If you go into the system map, click on the station, it will tell you what ships you have docked. Handy if you are in space and unable to check your shipyard list.
Also in galaxy map, if you switch to the first "info" tab and hover over the system, it will say which ship is parked there.
