How about for hybrids there is an experimentation mechanic in the creation lab that allows the player to pick 2/3 natural dinos to mix and see if it can create a "viable" hybrid. Not every possible pair would produce a living dinosaur you could add to the park; in fact most don't. Closely related animals have a better chance to produce something but hybrids of closely relatives are less remarkable than more distant specimens. Movie/TV cannon hybrids like I-Rex, Indo, and E750 could be special projects separate from the usual mechanic or they could be special missions that tell you what 2 or 3 dinos to put in the mix (and don't work before the mission). Hatching hybrids is more expensive than any natural dinosaur, and they can't produce their own offspring (assuming JWE2 does breeding). The end result will be about 20-30 hybrids, but hidden behind several thousand possible combinations. Base game hybrids (and any later additions) aren't expressely advertised in order to preserve an element of mystery for the player to discover.
