If you plot a route in the galaxy map, the number of jumps it will be is shown at the top of the navigation tab in the left HUD.
Not sure I understand the second part of your question. When you plot a route using the galaxy map it is calculated using the current jump range of the ship you are in.

My second question was trying to work out what the figure in brackets is which is next to my current jump range in galaxy map?
edit: I found it. It is the unladen jump range but what does it mean? I have no cargo at the moment. so is the figure in brackets my real jump range or is it the figure without brackets?

Ok. I'm guessing that one is your current jump range, and the other is your maximum jump range. It will only calculate the range in your ship as it is, by which I mean it won't be telling you that if you had different modules you'd be able to get better range, so essentially it's (probably) your range now, with the amount of fuel and cargo you have on board and the range with no cargo but a full fuel tank. Just a guess, as I'm not in the game to look.
Fuel counts as part of your load, if you have less fuel you can jump further.
