I feel like NPC hitmen and pirates have their priorities messed up...

Lol, I got the "how did you make it so far with that haul" message, this after loading up and making 1 jump of about 10LY (a fully loaded Adder, so yeah). I guess 10LY is quite far, but didn't think it was in the ED universe.
 
These were probably written during the game's Alpha, when 2500 credits was​ a big bounty. :D
Don't think FDL did cost 10x times less during Alpha though ;)
When someone flies ~100mil ship it will make you question his sanity if they consider 2500 credits "big payday" :)

I think whoever wrote dialogue didn't care about what number will be in "*insert placeholder payout here*". And whoever programmed the mission system didn't care what dialogue will be. Just everybody "doing their job"...
 
It's about the "supply station with X" missions.

It seems to be more common for these missions to spawn hostile NPCs to hunt you down as opposed to regular transport missions and independent trading. Typically when I take these missions is when the needed commodity is an agritulture commodity since those are typically easier to find for me on the side while I focus on more lucrative stuff. This is consistently giving me silly experiences where I can travel from one system to another with a full hold of gold without as much as a hitch while when I make myself a grocery list of vegetables, beer and meat all of the sudden half of the galaxy wants me dead.

Is delivering food really supposed to be such a cutthroat business? Like, literally? I mean last time I checked the competing companies in my local grocery business aren't having a literal war with one another and if they were I really doubt it would be worth the effort for them.

Wouldn't it make more sense to spawn hostile NPCs based on the value of the commodity I'm transporting? Just saying.

And the dead rise up to eat the living, tell me again how much all that gold is worth, compared to a pack of MRE's, a gallon of clean water, or even an unused toothbrush.

That's why the pirates comment about all your "tasty cargo."

They want to hit you with a manifest scanner so they can see all those yummy turnips you got stored away.

If there is a famine, you may be paid a set price to deliver some food, but if some pirate can nick it off you he keeps the food supply scarce and can then sell it to the highest bidder on the black market.

Yeah, it'd be different if you had a couple of tons of Tic-Tacs, Orbit Gum and barf bags in your hold, with the Bio-W. God knows they'd need them. It's no wonder their children are going hungry.

I’d be more impressed with them if they could figure out, you know, that their pirate cobra or eagle doesn’t stand a chance against this guy in a fully engineered conda or vette. But that’s half of the fun I suppose.

If target DPS == one shot death for pirate ship, output “I’m not messing with this guy”; leave.

Short answer: YEP!

Long answer: This one quite often wonders if the programmers or whomever makes such choices in the game rules/model/design ever took basic economics in school. If they had, then one wonders if they understood it. H.ell! Criminals probably never took econ in school but I can guarantee you that they understand it. Supply/Demand, Risk/Reward - it just isn't that difficult to wrap one's mind around.

Then again maybe the scumbags in the ED universe are morons or risk averse, maybe...

Nations, tribes fight wars over food.
Pirates don't, well maybe for rares but that would be about it. Pirates want non-perishables that they can sell for the most credits. 21st century or 34th century bread is gonna be cheap.

Then again I once had a Sidewinder pilot pull me and my combat loaded Python out of supercruise for no apparent reason I could see - suicide by Bounty Hunter maybe?
