I go to a mineral rich starport for indite. And they only have ONE???

At the moment there is literally no transparency of how the background simulation works and therefore why you (me or anyone else) cannot find stock in certain locations.
It could be because other players / npc have bought it all up or resource stations need some supplies before they can pump out the goods. It may also be that the simulation is largely based on random numbers and not based on the trading of stocks at all.
What is needed is more information about historic stock levels and trading volumes at each station plus details around how the economy works, without it you simply have to fly from station to station until you find one or two that "work". You could also consider out of game tools that the community has created due to the limitations placed in game on the required information.

Yeah it's pretty ridiculous that certain systems listed as a specific resource world doesn't have any items relating to their description.
Want computer parts then you may as well randomly choose a world to go search than jump to a world listed as "high tech". Just another tedious item search.

Industrial system has a lot of computer parts so everybody heads there and buy it all. And then everybody rush the some station to sell it. But they choose different stations are there you go - you have computer parts all over the galaxy, the only place where you can't find them is where they are produced. Bad production management i would say but nevertheless it does not necessarily mean that there is no simulation sitting on the server.

The smaller systems (population-wise) produce quite slowly, so if someone's recently been through and bought up their whole supply (you're probably not the only one doing such a mission after all) then there will only be small amounts available. Try a higher population Extraction economy, much less likely to run out and quicker to restock.
I had the same problem and ended up dumping the mission, not sure if it is just like that in the starter systems or further out as well, then again you get less missions further out...
