I have never seen one of them hexagon stations.

Saw one in the tutorial but not actually in space, just little sations with three landing pads or so. Is there any way to know if there's any in your neighborhood or is it just luck?

Look at the symbols of the stations in the system map. Square ones are the hexagon station. There is plenty of them floating about
