I hope I'm just being stupid here, I went to Jones Orbital in the HEL system in my AspX. I traded it in for a shiny new Phantom, went to outfitting and there is no Guardian FSD Booster to buy! I thought once you unlocked the booster, you could buy it like anything else? Do I have to go back to a Guardian Tech Broker to buy it each time I change ships?
No - you use the Guardian Tech Broker to unlock the item, and you have done that - but certain stations only have certain items for sale. You can‘t buy the booster everywhere.
An option is to use this tool: https://eddb.io/station to find stuff based on where you are.
Later on you can unlock the system Shinrarta Dezhra where you can buy all unlocked modules and ships in the game at the station Jameson Memorial.

You have the option to remove modules from the ship and replace them all with bog-standard E-rates before selling the ship.
Did you trade the ASP in along with the GFSDB? You can store it then use it in another ship.
