I have to guess you mean "Start the game, but launch the Odyssey version"?
If you got Elite: Dangerous on Steam or Epic, you will need to have also bought and downloaded the Odyssey expansion which is a DLC on Steam, probably similar on Epic.
After installation, you can choose which version to launch.
If you got Elite: Dangerous via the Frontier store, again, you will need to buy the Odyssey Expansion DLC, download and install it. In the launcher, click "Versions" and select the Odyssey version, then launch it.
If neither of these things and more a question of "What should I do now?" please let us know.
