Stilton sauce is extremely easy to make and fantastic with steak. Also, put a slice of Stornoway black pudding on a burger and crumble stilton over the top for a fantastic "black and blue" burger.
+1 for digestive as a base.
St Agur is a milder creamier introduction for those that find Stilton or Danish Blue to harsh.
