Ahh..or I mean to say...Arrrg
Welcome to the world of Pirating! One of my favorite hobbies in this game.
My favorite Ship for this profession is the Diamondback Scout;

It's not everyone's cup of rum, it's a technical fighter, not a typical pewpew ship. The first thing you might notice is that this ship has 0 cargo space. But, if your being honest with yourself, replacing traded cargo with stolen cargo is a negative sum game.
I'm talking about true Pirating PvP action (not the interdict, I'm just gunna kill you for the fun of it. Leave that to the Thorgoid loving traitors).
A true pirate will strike fear and confusion into their target, and at the same time make them willingly give up their cargo.
This is how i Live the Pirate Life.
-Start at a Trade CG, use the Manifest Scanner and monitor the coming and goings of players. Find a Lamb, and use the HighWake Scanner to follow them to their destination. This takes some practice, especially when multiple jumps are involved. (This is also a good way to locate trade routes if your not using an online trade tool) If the encounter becomes violent, this method keeps you from acquiring Wanted levels at the CG.
-I wait until they are docked before starting any conversations or threats. I start typing up my message while I wait, then send it out when the timing feels right. Learning when to send that message will make or break your encounter. I'm like Mung, I use the controller chatpad. I have found that a light touch is more effective than a Heavy "Gimme or Die" approach. I begin with "Do not be alarmed CMDR........ I am only here for your cargo. I am a hungry Pirate on the account. Deliver ....tons of (scanned cargo) to me outside of the station. I mean you no harm, but do not attempt to run."
It has been my experience that one of three things typically will happen;
1. They are so scared they Log Off. Satisfying
2. They succumb to my will. Very Satisfying, "I'm a Pirate!" (again I have no cargo space, but that's not the point is it)
3. They run or fight. Best and most exciting outcome imo.
I use the mines with Ion Disrupters to stall their thrusters, double shot frag cannons with Dazzle Shells to finish em off, and use stealth to ward off gimbled weapons and missiles. Again, confusion is the key. I have had many a message after the battle, "I didn't know what the hell was happening!"
Like I mentioned, this ship is not as straight forward as others. It takes a bit of practice, but its fast, effective, and a cheap rebuy. Perfect for a pirate.
That said, I'll change out the interdiction and scanners for a module reinforcement and more heat sinks. Now I have a very good PvE bounty hunter. I have no problem taking on a NPC Annie with wing support by myself. And I suppose if you really wanted to take on NPC's as a pirate, you could trade some armor for storage and hatch busters. I just find it more fulfilling to harass real players, and, I have made many friends in this game by keeping to the pirate code.
Well, that's my 2cents. I hope you find as much pleasure as a Pirate as I do. Good Luck.
