I think we are a long ways away from seeing flighted birds with complex animations like the birds-of-paradise, but maybe we could see the pheasants, as they are largely terrestrial? Plus these decorative birds are ubiquitous in zoos. Paradisaea sp. are rare in captivity anyway.
But I am still scratching my head as to why anyone would want Canadian Geese? Those things are vermin with wings, and they make a huge mess.
Definitely yes to more hoofstock! The kudu is my favorite African antelope! Eland is another great choice. And we definitely need more temperate hoofstock: elk, moose, fallow deer, etc.

I had asked for the cassowary and finally it arrived, I hope that the rest of my list may one day exist in the game.

The kakapo is unlikely to appear in the game. There are no kakapo in captivity, even in New Zealand, and they aren't allowed to leave the country due to their conservation programme. There are so few left that all of the living individuals have names, even.

The North Island brown kiwi would be a better NZ bird inclusion. They are common in captivity in NZ, obviously, but they are also in zoos in other parts of the world as well. The only real issue is that they are wholly nocturnal, unlike the aardvark which commonly comes out during the day. It's fairly easy to simulate a nocturnal house in-game, however, so I don't think it's a deal breaker.
