Ideas to promote co-op gameplay?

I think we definitely need a 2+ manned ship. Also I know traditionally elite is single player but come on, it gets lonely out there sometimes.

The idea of an interstellar Winnebago popped in my head last week; who knows what sort of thrusters you'd need to navigate ear canals though.
 
Convoys
Capital ship battles
Station invasions (escort the dropship to the landing pad)
Relay-race style cargo runs (think the 1925 medicine run to Nome)
NPC invasions

With a 2 person ship you could have co-pilot perform the extra weapon points 1 can't access due to 2 buttons at an instance.
With 2 persons you could add STEAL THAT SHIP for pirate roles. - once you convince an NPC to give up and escape pod you could board it for 2nd player to steal and do whatever you want, sell or keep etc.
You could get 1 player to guard a zone for your floating cargo which you are managing to trade whilst you go searching good places to sell it at (have NPC come in plus other players investigate your USS you created in doing so)
Ferry all your ships around to same locations.

This; having a nice toothy Cobra along for the ride would make a space cow full of shiny stuff a rather less-tempting target, provided that you both get interdicted at the same time (or that the escort can submit and draw off the attacker) by no more than a matching number of ships...
 
Mining might make more sense with more ships; say an Asp with big mining lasers and cargo slots and a couple Vipers with refineries catching chunks and spitting out containers of finished material for safer storage in the Asp.
