If our HUD is projected by suit, why do HUD elements get blocked by canopy struts?

Shouldn't the HUD element display "behind" the strut? This is particularly obvious in the FDL.

Also, regardless of any "gameplay" logic explanation, from a userability and user experience design point of view, this makes no sense whatsoever. Surely no one in his right mind designing something as important as HUD information display (in this case the distance indicator) will allow such a thing to happen?

Those hud elements are generated by the ship, not the suit. They're presumably "in" the glass, like a transparent television. That's why several hud elements are no longer visible when your canopy blows out.
 
Yes, they're generated by the ship. If you look around the cockpit, you can usually see some orange light sources which I assume are the holographic projectors. Some elements (targeting, etc) appear to be standard projections on the inside of the canopy (much like a present day fighter) and these are affected by the canopy breaches.

The UI elements and scanner etc appear to be actual holographic projections or are projected at the suit visor to give the impression floating on the dash.

Eh? I cannot see any canopy strut being drawn in front of or over any HUD element in your picture.

On the contrary it is eminently practical for the HUD to be visible all the time without being hidden by structural elements of the ship.
As a pilot the HUD is displayed as should be: practical and useful. I would complain if any HUD element were hidden by strut; it could hide vital information.

If it was fully realistic, you wouldn't have the canopy at all and have huge displays instead. However, that wouldn't be as fun would it. It's a game after all.

It does. Look at the pic.

The HUD is in the glass of the canopy. If there are struts they are not canopy and are therefore not displays either. Struts "block" HUD info. They don't block it really, it's just not where the strut is. Same as the bezel between your monitors. No display on your monitor bezels.
