I'm an in-game multi-billionaire but I have zero idea what to do with all this money

I like being in my solitary section of the black, several thousand LY from the bubble with my fleer carrier and trusty Dolphin while discovering buttloads of new systems every day, but I have several billion in my FC's "bank account" and I honestly don't know what to do with it all and especially being so far from civilisation.

What should I use it for?

Start doing stuff 'properly' instead of trying to rush a reward. Horizons base scans are actually lots of fun when you do them in the SRV, for example.

You've hit that point where you can look at the game and focus on what you enjoy- beyond making credits.

Answering the question in a more direct way, no there's no significant credit sinks that gives you a reason to have billions stocked up.

I'm kind of awash with credits myself (not to the extent of some though) but I view them as keeping score - with myself. And I'm actually averse to spending them unless absolutely necessary :D

I feel I've not accomplished anything if I finish a session without making a profit.

I wish you could take a break and splurge on that big vacation to Ancient London at World craft theme park. But alas it's not in game yet.

This so very much. To me the game has so often felt like a second job. Unlock this, get that, rank up those. But once that was done, this overwhelming feeling of freedom settled in. I'm there, I'm done, I've got it all, now I just do what I want, when I want. PP 2.0 threw a little curveball, having to re-unlock all the modules, but that's now done too. That's actually a feeling I wish I had in real life, but I'm not even close. And what I happen to like doing most is finding roles for the various ships, then engineer them to - my personal - perfection. So with a steady stream of new ships my playtime has increased again, as I like doing that. Now I'm brooding over how to set up the Panther, even though I won't have it before Christmas probably, I do not buy pre access ships. Meanwhile all of the theorycrafting and material collection for the Corsair is done, I just have to buy, outfit and engineer it to plan, hopefully next month.

To be fair, you reach the point of credits not mattering anymore pretty quickly - depending on your play style of course. As with any game, the more you play, the easier it gets. Personally I don't think I've worried about credits anymore since I bought my Fleet Carrier. I DID have to do some work to get the credits for it, but after that... psh. I have not cared for credit rewards or credit-per-hour rates in a very long time.

Since you mentioned it, the only "work" I had to do was the power play unlocks. And I use the term "work" very loosely, because it wasn't really work. I never cared for PP modules before, but with PP 2 they just rolled in. I liked about the new PP that I had... tasks to do. I mostly just did my weeklies and then some core mining on top. I might have been fortunate that core mining as an activity worked very well for merits as a Kaine pledge, but well. It is what it is.

Generally, if something felt like work or a chore, I just didn't do it in the game, no matter the shiny reward. Material collection has become so much easier now, but even before I thought it wasn't too wild, the materials mostly just rolled in alongside my normal gameplay.

As for what to do with your credits: Sit on it, do the Scrooge McDuck, or, if you're into that kind of gameplay, park a generous amount of it in the upcoming squadron bank.

The PP modules are all over the place. Some are simply just terrible. Some are good in very specific niche builds. Some are universally good. Some are build enabling. And yep, I'm still going to do what weekly assignments I like and get that occasional care package.
