I'm confused here.

So I just build a brand new system and I went back to play some elite dangerous. Well I got on and continued my journey to the LP 98-132 system. When I left the spaceport and went to the next system my I noticed I had a cargo scoop instead of a fuel scoop. I stopped and went to look for a spaceport. It then booted me out of hyperdrive being to close to the sun, no problem I flew away from it. But later all of a sudden my ship would not stop taking heat damage and eventually blew up and I died not even close to a sun. That was annoying. Then I come to find out that I have the fuel scoop equipped it just wont let me have it as a fuel scoop. It says it's a cargo scoop and even though in outfitting I have the fuel scoop equipped it wont let me use it. I don't know whats going on but I pretty much got turned off the game because of this.
 
If you have a fuel scoop fitted, it's completely automatic and you don't need to activate it in any way. Just fly close to the star in Supercruise and you'll hear it kick in - and once it's finished it'll gurgle a little. It won't do anything in normal flight - i.e you have dropped out too close to the star and cooking yourself.

Cargo scoop is the cargo hatch. Fuel scoop is different. Should show up in your Modules list. Automatically deploys near a star. You can only scoop specific types of stars though, so it sounds like you tried scooping one that was otherwise. Those T Tauris are deceptive.
 
Back to your unexplained overheat and detonation. Could it be possible you had silent running active? That will overheat your ship.
 
I believe you were probably killed by flying through the Sun's "Corona" (atmosphere, which is hotter than surface)

If you drop (happens close to any planet object) boost away in normal (slow) flight, and WAIT for alarms and heat to cool down. When you supercruise away, even aligned with escape vector, the heat increases AGAIN, so if you try supercruising before your ship cooled down, the problem gets twice as bad. It's usually possible to escape but if you get too close and supercruise fails, you will take damage. Look out your windows and check compass (circle with EMPTY blue dot inside), to make sure the sun is behind you .. even if you don't see the star ahead, flying the surface can also be deadly.
