I'm travelling to Beagle Point and today encountered 3 White Dwarfs although they are disabled, is the plotter broken or something? Jumped into a system using neutron star and the next jump required using the white dwarf but managed to escape using jumponium.

One more thing to consider before asking Frontier to cheat your data back in: it might be possible that in the future, you'll lose your ship due to something that wasn't your fault, but you can't prove to support that it was a bug. In that case, if you still had your one chance left, they'd do
it: if you didn't, they won't.

You can accidentally turn the route filter off, or adjust it to a different one. The explanation is likely that you switched to a different map view configuration (on the galaxy map), and the game quickly re-plotted. The plotter isn't broken, but it's not difficult to adjust it without intending to do so.
I opened a ticket to FDev, just to know what can be done... or not.
And seems my data can't be recovered, they can put my ship back in the system i was when my ship exploded.
So i decided, to let thing like they are.
This game is Dangerous, and i know why now.
But i still have questions now... i was planning to think about this in a couple of weeks... months... but this WD decided i should think about it before...
What should i do ?
I don't think i'll leave the buble right now, may be later when i'll be used of meeting people.
Probably a good time to improve my good old Chimaera ?
Or change ship ? Anything interesting in the last ship released ?
Should i go for merchant ? mining ? or doing tourism mission ?
I'm not a big fan of pewpew...

Hm, that's news to me. Or perhaps they can only restore it if you didn't click the rebuy screen?
Anyway, let's see, it has been two years for you... Of the ships added during that time, you'll probably want to try out the Kraits, especially the Phantom. Then there are the Alliance ships: I'd recommend the Challenger for combat or multi-role, it's surprisingly fun... but you said you're not a big fan of "pewpew", so probably not.
From what's entirely new, there is core mining, and if you want enough credits for fleet carriers, mining is pretty much your only viable option. (If.)
You could also visit some nice phenomena around the bubble, see the Codex for them.
And that's pretty much all from the last two years. There has been a content drought, still ongoing.
