In cockpit movement and turning it off.

Personally I read "between the lines" of the OP and understood it as this:
The crosshairs for my fixed guns move around too much. Is there an EASY button I can select that make the ship and crosshairs stay steady? I dont care about realism or immersion. I just want max pew pew accuracy!

This was my main reason for leaving en; I liked the chaos of cannon impact rattling cockpit and windows as I tried to line up a shot amidst the fire and smoke on my dashboard, and through a cracked and mud splattered window, but the more competitive players liked the glassy smooth movement and aiming with all that distracting smoke and sparks and fire OFF... and the game pitted us against each other on "equal terms". :(
 
2 work arounds:

hold the UI select key down, this pulls your head back a bit before you select left or right UI. naturally this isn't perfect as if you try to change your pips you'll get a face full of UI instead, but it is a handy hack to remember

get a cheap head tracking solution. these can range from free to about £40 if you don't want to break the bank.

for free you can strap your phone to your head and get that to track your head

then there is the EDTracker or LED tracking. the EDTracker is based on some cheap parts and they will tell you how to put it all together. there is also LED tracking, again parts are cheap though you will need to sacrifice a webcam as the infrared filter will need to be removed and a visible light blocking filter added instead (exposed photo film, yeah, the stuff before we went digital, or floppy disks, yup, those things we used before USB sticks).

both of those options can be had for a sensible price all pre-made for you if you don't want to tinker, which is where the upper price of £40 comes into play.

you can of course throw hundreds at it, but you dont need to.

i didn't read that at all in the OP. when i was messing about in the combat tutorials my speed and the HP readings of both me and my target would frequently be off screen when i was doing a tight loop. it's got nothing to do with aiming the guns. now i fly with headtracking when the bottom of my HUD goes off screen in a dogfight i can just glance down to see the info i need. for me this is a better solution than turning the camera movement off completely, but i fully understand why others would prefer a toggle for that.

doesn't really seem fair that to see such critical info such as hitpoints and where the blue zone is you need to have headtracking, so in elite those who want more immersion are at an advantage than those that want less. but hey, just being able to look up and see where that pesky eagle got to is advantage enough over someone with regular headlook, let alone someone who has no headlook keys bound!
 
I wish the HUD was more HUD. Throttle and speed should really be up around the crosshairs like in every fighting flying vehicle since the mid 20th Century.

Once time, my canopy got blown out. A cool effect was my partially available HUD, since it was only able to project onto the glass that was left.

Then I thought...why the heck is the HUD projected onto the canopy?! It should projected onto our HELMET'S VISOR!

Anyway. I mostly agree. Having to glance down to look at something, and have it off screen is a bit annoying, and can be very hazardous during combat. Or aggressive docking maneuvers. ;)
 
even if you could just reduce it to the point it didn't cover up the throttle quadrant, that would be great. with a keyboard throttle you lose the ability to find the blue sweet-spot right at the time you need it most

if i was likely to be in a battle for my life, i would make sure i could see my controls. even if my head couldn't move, my eyeballs could look down enough to see the instruments
