Ofc they can interdict, why wouldnt?
Even with SCA you start to slowdown sooner than they do so they can still catch you to trigger the interdiction

Sure, SCA can help reduce the flight time, but usually by engaging the SCA when timer reaches between 5s and 3s depending on how deep the station is in the gravitational pool
But, as i said, if you want reach the station you have to slow down, SCA or not SCA. You cannot keep speed to 100%
IF someone want to interdict you, they dont need to slow down at all so they still have time to catch you *() - assuming they're close enough.
*(although SCA will definitely reduce their window of opportunity, in no way will prevent them from interdicting you)
