IL 2 Sturmovik? Picked up this at a really cheap price so I can test out my x52 while I wait for standard beta. From how people are talking here it seems very similar. If you want to turn you roll one way and pull down or up. Twist controls small rudder movements left or right. Dog fighting is difficult because you need to look at the map and predict where the other guy will go and make adjustments in order to intercept on an attack vector without exposing yourself to other attackers. Very difficult if you are facing an unpredictable foe. I'm guessing the space ships have a lot more maneuverability than WW2 war planes though.
 
The basics is similar, but there is no gravity, no propeller, no stalls. Also in ED there is much more playing with speed and you can also turn off flight assist, that means that you can rotate while continuing in the same direction. You have to distribute power between engines, weapons and shields + you have extra lateral and vertical thruster you can play with copmared to WW2 planes. If you play IL2 on hardcore with all the radiator/propeller management, ED is easier, but there are different tricks you should learn.
