So when I go exploring it really annoys me that after I scan something in the current system that I have to go back to Galaxy Map and replot my route. Is there a way to simply go back to the original "travel plan" after scanning local system objects? I may have just missed something.

In the left panel under navigation if you had previously had a route plotted, the next star should still have an icon next to it - select it and your route should still be there.

They just added a function for selecting the next system on your route with a key-press. It's a very welcome change!
