As per the title. I believe there are "easy" ways to capture the two eyes image which we can crop and reformat to one eye only etc. But it would be great to have a way to output 1080p straight. Maybe there is one such already out there?

Does this not work, I know its less resolution than you require but that may not be possible due to physical constraints. You may be able to supersample and output that to the above, but on second thoughts that may be difficult.
