Is there an easy way to adjust the chaperone with the Vive

First i should say, that VR in ED is really amazing and somehow a very diffrent game.
Even a simple Sidewinder (i tried first the training mission to test if everything works fine) feels like a big ship, because you "feel" the size of the Cockpit.
Following an enemy is also much easier while just looking up/down to see what course he is plotting...
Amazing is not the right word, its Super Fantastic in VR :)

The first Problem for me was, that i configured the Chaperone not correctly and my View about 80cm above the Head of the Pilot-Avatar, so i looked halfev out of the Ship-Hull :)
Adjusting that worked more or less good with starting a new room-setup and then restarting ED.

I know that i could edit %Steampath%\Steam\config\chaperone_info.vrchap to change more or less simple the Position of my Chaperone to adjust the Virtual Seating in ED, but restarting ED everytime to check if its set correctly and nice is not something everyones likes.
Maybe i missed some easy correction of the Seating-Position in ED or for the Chaperone with Steam-VR ? Some unknown Hotkeys for me maybe ? :)

Have you looked at setting when you are in VR, seem to remember seeing level of chaperone last one listed as "developer" mode.

Also ED has F12 to reset head position.

Your head position can be changed in game by pressing the "reset HMD orientation" button, which is found in the controls menu under MISC. You'll probably have it bind it first. There's no need to reset your chaperone bounds to move where you start. Simply press the button once you see the start menu and the buggy after the opening logos are finished playing. Readjust as needed.

Fun facts with the Vive: your commander's chair is slightly elevated, so if you get up to walk around your cockpit, you'll feel like you're walking on air. Standing up and resetting your HMD orientation will fix that. Also, it doesn't matter which way you're facing in your VR space, you'll always be facing forward, your head where your commander's head should be, when you reset. I've been using this fact to explore corners I can't reach in larger cockpits. :)

As stated in the posts above, put your head in the position you want to look forward with. Then press F12. You can repeat as often as needed and it works anytime.
