What you're saying is so ideal. I wish I can do this but the game mechanics simply won't allow this form of gameplay. I do not know the opponent's speed. NPCs can boost as much as they need while our boost usually ends up overshooting them.
Using the lateral and vertical thrust is so hard especially when by the time you're on their tail, they are turning such that you're already flying perpendicular to their direction of travel. It becomes such a glorified side scrolling shooter.
Actually, the games' mechanics give you an incredible amount of control. More pips to engines means more speed and maneuverability - PIP management is fundamental to getting th ebest form your ship. The Cobra is reasonably capable, and pretty good as a combat ship, seeing as you can run away form anything you can't kill very quickly.
Also, what controls are you using? Many do well with a KB+Mouse, but honestly, a good HOTAS with an analog thumbstick for lateral thrusters is just unbeatable for pure immersive fun.
Also, there are some good FA off tutorials on youtube, worth looking at. I like to fly with a mix of FA on/FA off in combat. Switching to FA on at certain moments gives you the ability to perform maneuvers that are sharper then can be achieved with FA off alone (well, at last, sharper than I have ever managed), though I hardly claim to be Isinona or anything...
Really, though... Practice, practice, practice. YOu're flying a Cobra, a fairly early game ship, which tells me you're fairly inexperienced. It takes time. Also, go to planetary rings that have Resource Extraction Sites (RES), I find flying through asteroids whilst in battle far more fun than open space, and having obstacles helps remove the jousting feel...
