Not to start a fight with you but twice now, on the way back from a trek into the black, in an unarmed Dolphin, no cargo, no missions, no bounty, I have faced interdiction. Escaped it easily enough but it does appear to be random if rare.
Welcome to ED. I sometimes get dicted when I'm not even doing missions close to my home base.
Get yer thrusters engineer and haul as far away (using boosters) from the mass of the bigger ships (they'll pull you out of SC fast). Then get back into SC asap.

Ok, I think I figured out part of it: The Entrepreneur rank is 3rd highest, but I didn't know that. I've been taking Entrepreneur jobs, which may be attacked by 3 Master FDLs. IMHO, a Trading rank should be earned by number of trades done (and the challenge thereof), not by someone learning how to mine LTD or Void Opals. A new player could earn 140M credits just from two mining sessions, but have no skill in dealing with "Entrepreneur" adversaries.

Take those entrepreneur jobs! You can easily get out of most interdictions. You'll get more Rep points with higher ranked missions. Buuut on a long enough time line, an Anaconda will interdict your before you can escape his mass, then pull you out of SC. That's why you should have some decently engineered thrusters. The process then is simple. Power settings equal pips to sys and eng (no need to waste pips on weapons) max throttle and keep hitting the boost until his mass lock is lifted. Then hit SC while still punching the booster. Unless you're flying a big T-series tug boat, you should easily get away and back to work.

Sorry Thwarptide, but this is not really the best advice.

If you submit to an interdiction from a mission spawned NPC and then go back to SC the NPC will simply spawn again right behind you seconds later and will interdict you again. You need to either evade the interdiction in which case the NPC will be gone, or you need to destroy the NPC otherwise you will continue to be interdicted time after time.

If you submit and jump to another system the NPC won't follow you, but if you still need to complete the mission that doesn't really help you. (Also, there's no mass lock in SC only in normal space. You can escape an interdictor by accelerating away from them in SC, but they will catch you when you decelerate to drop out at a station.)

@ArcherS , yes, it's a bit strange that players can take missions way higher than their rank and experience, but that's how FD decided to do it. It wasn't like that early in the game. And of course those missions pay more, so players want to take them, hence we get threads like yours wondering what happened to you!. Best thing you can do is to pay attention to the mission rank as that will determine the challenge that you may face.

Yep, I had been depending on the client to say the rank of the mission was higher than mine. I now know that I need to ignore Entrepreneur -- and probably Broker as well -- for a while longer.

I never said one should submit to interdictions. I clearly my intent was that it's OK to take the next level missions. Also on a long enough time, (when he ranks up) he's gonna get dicted by an Anaconda. I also offered clear "and sound" advice how to escape successful interdictions.
Most of the time attempted dictions can be easily avoided by following the escape vector. Sheesh

Engineer your ship to 450 m/s boost or better. Then you will have options with basic experience with average flying skills until you get better.

Grade 3 dirty (no drag) get me out the way of Condas. That said, if you're allied with the locals the cops will pounce all over them. Assassins aren't worth anything though outside of the assault charge so I usually evade the interdict.

You'll find a lot on higher superpower rep grinds, so be mindful.
