Is it just me, or does it seem like each ships landing gear deployment seems to vary on time it takes to deploy?
My DB scout takes a while longer than my Cobra or Viper did.

Different ships have different deploy times.
In a Courier, you have time to go for a coffee between pressing the switch and its actual deployment.

Yep. Different ships have varying types of landing gear and take different times to deploy and retract. Some of the larger ship take even longer with their much larger landing struts. I think it might be possible to see it better if you install a docking computer and then go into the debug cam mode to watch it land. Havent tried this myself so not sure and from what I've read it may be a slight risk as the computer will still do some odd stuff while landing, though I havent had any troubles with it recently (but then I very rarely ever use the docking computer)
I get a weird speed boost when my gear goes down. It doesn't happen all the time, and it's not just the speed display scale changing, it's an actual speed boost. I have not figured out what triggers it, I just have to be ready for it. Annoying.
That sounds a lot like a bug. I would definitely send in a support ticket on that - extra points if you can get a video of it.
What ship are you flying? We should see if that's reproducible.
Yea that is not supposed to happen. When you drop your gear your speed is supposed to be limited and you slow down, not boosted. I would submit a ticket or bug report if the speed is going up not down. Now it will get a boost when you retract the gear as the speed limiting is canceled.
Weird indeed. I think the norm is that you actually get a speed reduction because of the drag. Thats why it bothered me so much to notice the deployment time. I rely on the landing gear to time my approach/ speed into the docking station.
There is no drag in ED.
You slow down because the flight computer has a lower speed limit that it applies when you deploy landing gear.
Only really noticed it with the Courier which seems like you need to engage before you hit the letterbox. Found many times sitting above the pad waiting cause I was too slow engaging, or too fast entering lol
