There are groups that do SRV races, time trials and so on, and @Alec Turner does his planetary circumnavigation too. Perhaps Alec could point you to the discord for the racing group as I can't think of their name sadly.
Thanks for the ping @Bottom Hat - there are two big racing groups, the Buckyball Racing Club (who do time trial races where people have around a week to try and get a top time on a running leaderboard), and the Elite Racers who are more about live same-instance races scheduled at particular start times. Both do SRV racing and the latter have just finished a 7 race endurance championship with individual stages being between 80 and 250km long. Let me just go and grab some videos and discord links for you ...

Lastly a hot tip that's not widely known yet - I'll be on this Thursday's Frontier livestream as a Buckyball representative, along with BlackMaze from the Elite Racers, talking about all the Elite Dangerous race action from throughout the year 3306 plus we'll be trying to teach the community managers a few things about the SRV.
