I self identify as a peanut butter sandwich. You are not being inclusive and are forcing a binary pair of decisions that specifically exclude peanut butterists wether they are crunchy, smooth, or mixed 
In other games I have used female avatars, either for tactical 'distraction' or because they weigh less (racing games). In ED my usual, non-gender specific name (Riverside) wasn't available & the one I chose (Cmdr MalcRiverside) is gender specific so I have a male avatar.
My in-game 'character' has no gender specific traits, but I essentially play as myself.

As for the poll, I'm a male in a male's body.
I'm a dude so I play my character as a dude. If we had extra CMDR slots, maybe I'd have a female character, though probably not. My psyche is so unforgivably masculine I just can't find the fun in pretending to be a woman (though I've tried in other games).
Bethesda games are the exception though...but that is because modders have made some pretty hot body and armor mods. I pretty much just stare at that booty in 3rd person while a Draugr nibbles on my face.

But it is a very nice wired and sweet experience in VR to set it to female once and look down your Body.

Each new commander I start is given a name. Most of the names are male, but some are ambiguous or female. If female I'll make them female. I would say about 1 in 10 of my commanders has been female.

Most MMOs where you watch your character run around, I play a female. If it's just a ship persona that you don't watch, I could choose anything.
I don't recall being offered the option when I started the game, in any respect I am male and got a male character!

I choose female in Elite simply because she is the continuation of my old EVE online character Vasea Azure - I quit EVE last year and moved on here. The space girl must live on.
you can set / switch it in the Settings somewhere
That raises a question: if we now can have a sex change operation whenever we want in options menu - will it be the same after commander creator? :S
Poll reveals there is a female who plays Elite.
I thought about changing, just so I can look down at b-rests (censored? lol?) on those long trips. I've played females in RPGs before, but it's rare for me to choose that option.
I know some of the better players way back in Rainbox Six Vegas would play as females due to a supposedly smaller hitbox. Doesn't really matter much here, I suppose.
