It's a T10, the difference between the heaviest and lightest is 5-7 m/s no more.

I think you're wrong. The slowest Interceptor has a speed of 450. Anything below that (and especially the heavy, clumsy T10, which has a VERY low speed) is of little value.
(my translation may sound harsh but I don't mean it that way, sorry)

You missed the point entirely.

Speed is important only to torpedo more vents so that the core is exposed for longer and then more damage to the core can be achieved.

Evading interceptors is irrelevant - the video is just a maximum damage showcase, not a how-to-attack-titans advice video.
