For sure you can switch of many of the data gathering aspects, but at the moment it is not 100% clear how far all that goes, how much MS will store on their servers (and for how long). Consider this, remember what the original Xbox One was going to be? And how all that exploded (quite rightly) in MS face when eveyone pretty much said no to a device in the living room that had an always on camera that could send pictures back to MS servers (iirc that was more or less the concern). That was not that long ago, and a clear sign as any that MS are now a spying organization first, a service organization second.
Can i trust a company that thought it was fine (they spent the money developing it!) to release that Xbox One to the worlds living rooms? Can i trust a company that packs so much data gathering into it's new 'final' version of Windows and switches it all 'on' by default, when probably 90% of it's users (your mum, grandad, uniformed young person etc) are never going to dig into the OS to check that stuff out? The answer is a catagoric no, i can't trust that company.
I speak out pretty strongly on all this because i read Orwell and Huxley at school and those type of societies are not ones i want to aid come into existence, even though i know with the prevellence of Facebook and all this tech, it is pretty much here already, i just refuse to take part in it and warn everyone about it when i can.
While we get more details on Windows 10 and what it is doing it is probably worth waiting (even if you are putting up with 8 currently!), you have a whole year to get the free upgrade, so need to rush into it (imho).
