Nickel is a grade 1 Raw material in Raw category 5.
It would be better to farm the Category 5 Grade 3 material (Tungsten) or Grade 4 material (Tellerium) and convert them to nickel at a Raw Materials Trader.

At the crash site in the system Orrere on 2 B (coordinates 43.827, -173.969 (just use a detailed surface scanner), you can get Antimony (Cat 7 Grade 4), Ruthenium (Cat 3 Grade 4), Tellerium (Cat 5 Grade 4), Tungsten (Cat 5 Grade 3).
If you look at the conversion rate table on the first link, a single Grade 4 material in the same category (Tellerium) will give you 81 Grade 1 Nickel. A grade 3 (Tungsten) will give you 27 Nickel each.
It is far more efficient to go after higher grade materials.
