For deep core mining I like the Challenger as it has great low speed agility making flying "inside" the cracked roid a breeze, capacity at 64T is a bit limiting but with void opals that's around 100 mil.

I mine with Cutter. Not most nimble thing but can have mining thingies in it, and still be reasonable armed to make short work of lurking NPC pirates. And full powered G5 prismatic shields can easily handle any collisions.
