I have been doing a bit of Titan mining and think I have figured out some of the mechanics to doing it safely. Though it did cost me a few rebuys figuring it out, click the spoiler below if you want to skip some of the rebuys.
Last 4 runs I have picked up approximately 190, 240, 290, and 250 pods and almost all of the hull damage I took was from the angry Titan blue 'magneto' pulse. Last run of 250 took about an hour carrier to carrier.
Caveats are I know the dangerous end of all the Thargoid disassembly tools and have done a bit of sub surface mining so those mechanics are not new.
The key part for me was figuring out the Thargoid interceptor and hunter engagement point. If you make a line roughly parallel to the maw pit that is pointed 'up' and stay below that line they might toss some pot shots missiles at you but will not actively chase or shoot you. You can even sneak away if you stay below the line of death and are cold enough.
Getting in.
With the cutter below I am using 4 to 6 caustic sinks to get in. A faster ship will probably use less.
Mining.
Expect interceptors to deploy swarms as they see your limpets. Only got enraged thargon missle'd once early on.
Scythes will grab some of the pods, especially if you open a lot of chambers at once.
You get better turn over if you are close to the chamber before you open it. That said if the chamber is up high near said line of death I just let the limpets chase. I usually let 4 limpets be idle before I open the next chamber.
The angry blue pulse. This is where I take the most damage. It might be on a timer but not sure. It will bounce you around and pummel all of your modules. If you get bounced above the line of death and you have interceptors hovering you are going to get lite up. When it happened to me I went from 95% hull to 35% before I managed to get them to disengage by going deep right next to the Titan and cold enough. With the current build I can survive 3 or 4 of these pulses before the modules get too flaky.
Last run the FSD missles were popping all my idling collects so take more limpets than you expect.
Getting out.
Go cold, move away from any hovering Thargoids. Avoid boosting until you are 5km away from the Titan.
I would use the pulse neutralizer on the way out as once my cargo rack decided it had had enough and spat out a bunch of pods the one time I let the pulse bounce me out.
Relog. Yes it is cheese.
I have ignored everything and now I am getting pummeled.
Find a deep spot and go cold.
If you are in a fast ship, Phantom or Clipper you can bolt for the rings but that has a few challenges in itself.
Eat the rebuy and try again.

This is a repurposed long haul cutter. If i was building from scratch better hull which would let me run 3 MRPs. B rated power plant, distro, and thrusters in the hope it might mitigate some of the magneto pulse damage. Also would go with a rated sensors to keep better track of the glavies.
I think the size 7 multi is the best option but largest and highest grade collector module is the key. I tried with a size 3 multi in a clipper to get more cargo space and constantly got shot because I had to encourage the limpets to get the pods.
