Disclaimer upfront: I'm not suggesting that these ideas are minor in terms of development time/effort. I just call them minor because they'd be unlikely to show up in a "hot new features in Planet Coaster 2" list.
- See individual product coast when setting prices in shops/restaurants
- Allow LSM launches to act as block sections, and set their acceleration accordingly (a rolling launch can have a lower acceleration than a launch after a complete stop)
- Allow defining policies to automatically train employees and bump their salaries
- Allow making multiple variations of priority passes, so you could make a limited version of a pass that works for a limited set of rides, or even a limited number of uses on a ride
- Allow marking a path as "employees-only"
- Building tool to evenly space items along a line or curve (I suck at aligning hedges and fences)
- Build tool to spread a certain set of items over an area (rocks, trees/shrubs) to quickly make big natural looking areas without caring about each individual tree
- Ability to have queues with joint fences (like in a cattle pen)
- Variable boarding/disembarking times, so watching a coaster load/unload looks less robotic.
- Separate loading/unloading stations or parts of the station
