Alternatively, allow yourself to be interdicted. If you're hunting pirates make sure you have some cheap cargo in your hold. The pirates need to scan you for cargo, and then attack you. If you have no cargo, they can't pirate you
Where do you find the pirates/traders/etc wanted by these missions, and how do you know that they are pirates/traders/etc once found?
For the pirate ones you can also destroyed wanted ships at nav beacons. I've found only the wanted ships that attack another ship seem to count though. However kill Bounty hunters missions don't seem to work at nav beacons, and I haven't tried any destroy trader ones yet.
BUT if they are wanted (or you're in an anarchy system) you can still engage them, and it will count towards the mission.
Wanted ships aren't necessarily pirates. They could simply be traders wanted by the local system authority (for loitering on a pad or accidentally shooting a kill-stealing cop!).
