Instead of selling or upgrading my ships guns, cargo space, scanner etc why cant i just decide to keep an item in my own personal hanger ? same with loot, if i go on a pirate run and steal some cargo, why cant i just keep it stashed rather than sell it on straight away at a black market ?

Its early days for ED... will we ever get our own hangers, will we be able to fit our ship from our own personal mods ??

It is early days, but keep in mind, even with multiple ship ownership, you'd have to revisit the system where your hangar is located to pick up stuff. Frankly, I'd have a nightmare of a time keeping track of where to go for what...
