Hutton orbital (no not a troll)
Its surprisingly pretty with the sun setting over the planet, and plunging the station into darkness (KHAAAAN) and then coming back after going afk to find the sun shining on the outpost :)
 
Ross 780 has a Gas giant with a highly eccentric orbit which causes it to touch the star, only problem is the planet takes a month to complete its orbit and is touching the star for a week at most

Try Ross 156 it has two planets orbiting very close together. Had a real feel of presence while driving under it.

Love the vids btw, really polished and informative.

Something I didn't realize, until I went to go and dock there. Krylov Ring in He Bo is an ELW with rings, and the station is orbiting between the planet and the rings. Seems like every time I go back there, I find something else truly unique with the system. Maybe the graphics update will bring it's asteroid fields back to their full glory as well.
 
Not sure how unusal or impressive it is, but I always liked the Nuitu System for its ring-fetish. Rings everywhere, a ton of res site, it also has pristine metallic rings and multiple landable planets with rings.

This view might not be that uncommon but I remember being impressed by it in the Horizons beta - View from Kumay, a moon in a close orbit to the earth-like planet Apasam in Chi Herculis:
