From what vaguely remember, there was a setting in a config file that you changed to move your seat back or forward from the dashboard/windshield. The problem is I cant see important info on the dash while maneuvering.
Yep, that's the FOV slider.
If you can't see your complete HUD, you most probably messed something up already, though.
Go to your graphic settings and move the FOV slider all the way to the right.
If it's still not enough (which normally is, but some people prefer to have really wide view), you can go to
C:\Users\%username%\AppData\Local\Frontier Developments\Elite Dangerous\Options\Graphics\Settings.xml and change the FOV number to even higher (I think the normal maximum is 60). Just be aware that the higher the number over 60, the more pronounced fish-eye effect you're going to get.
Also, if you're having a problem with your view shifting up or down during pitch manoeuvres, which obscures part of the HUD (namely radar and heat/throttle gauges), somebody here shared a good trick, recently - you can just press the "Focus" button/key (the one you use to look at different panels around the cocpit for example), which temporarily shifts the view a little to the back.
