Thus I am not making money from entrance and can no longer play the game. I have set it to 500, otherwise the Gulpee girl goes crazy. Once the number of guests have reached 500, they will never leave and I no longer make money from entrance.

Just start a new zoo and set the number of visitors to 500. Once they have reached that number, they will never leave and you get no longer new visitors. They are not stuck, they are just not leaving.
