I think there are certain filters NASA use which map nebula colors to the elements they're made of. For instance, green might be matched to oxygen (I don't actually know if it is).

In the game there are several nebulas which aren't red.

Witch Head is blueish, Pleiades is also blue, Crab is orangish, Veil Nebula East is pink and blue, Sadr is orange, many are blue/violet, others somewhat greenish. But yeah, red are the most common.

All the nebulae in the game are "false color" just as many astronomical pictures are, assigning "colors" to wavelengths sometimes far outside the visible spectrum. However reddish is the most common hue since Hydrogen's spectrum is mostly towards the red and infrared and it tends to be assigned there in false color imagery too. That being the case FD's expression of artistic license with them is understandable.
