I juat use Torpedoa to take out the shields and whatever anti hull weapon Im feeling like using that day. Takes under a minute to kill the target regardless of what it is.

I do tons of those.
About the only thing I'd change would be to put LW/deep reactive bulkheads, and switch the HRP to thermal/deep.
You may lose your shields if you're new to those so the extra hull/resistance is prudent.

I prefer long range sensors too, to resolve enemies at a distance.
 
I find that I am interdicted by the target more often than needing to interdict the target, and the target always pops at the mission ss. You could use that internal for something else.

The difficulty on these has increased a bit, so expect to face engineered weapons.

Some folks prefer to smash the target and dash, others peel away the wing then get the target.

I prefer to whittle down the wing, while keeping the target tethered with an slf (they will sometimes jump). Your build suggests a burst strategy.

I prefer frags or OC MCs one with corrosive of course rather than rails (I like the MC on the huge HP).

Your opponent will have shield cells, so if you're planning to use the rail for that purpose I get it.

I usually do these in a Krait with an all MC build with an imperial beam slf.

If you have a Corvette, these are pretty straightforward.

Be careful not to take the deserter version. They are usually clean and wou'll rack up a bunch of notoriety, and extra cops will show up to attack you instead of the target.
