There aren't going to be any mammoths at launch, and I doubt they will ever be added to the game. Also no Placerias at launch, if that's what you're referring to. We'll see what happens with Lystrosaurus being in JW Dominion and whether that gets added to the game. If so, it could open up the game to more dicynodonts.

Therizinosaurus is a strong candidate for future inclusion, but won't be in the game at launch.
 
It's not known, but at this point it seems most likely to be just the 3 new land animals in base game (Coelophysis, Amargasaurus & Qianzhousaurus), given there's more than expected aquatic species (Mosasaurus, Ichthyosaurus, Plesiosaurus, Elasmosaurus, Liopleurodon & an unknown Mosasaur).

Species will be added over time in DLC that you will be able to buy (March/April, June/July, September/October & November/December are typical times), as well as an update or DLC with Jurassic World: Dominion.

In terms of what we could get from DLCs, it might only be "Reptiles". To fit with the way animals are created right now, it needs to lay shelled eggs, and I'm not sure that consoles will be able to handle feathers.

Well, new gen consoles can handle new additional features like dinosaurs laying eggs and feathers would be a welcome and nice, but these additions are more likely after Dominion launch
