Not fit for purpose

Fitted a Supercruise Assist module about a week ago thinking it would be great to swap-out to do other things whilst it takes me to my destination station.

How wrong I was!

I have to ask why this was seen as fit to be released when twenty percent of the time I return only to see my ship has made an emergency stop due to target being obscured. Surely, if they can make a docking computer work, why the hell can’t they take the time to code this properly so it can manoeuvre around a planet!

So frustrating!

It's probably due to your fundamental misunderstanding of what supercruise assist is for.

If you had read the instructions you would have seen where it won't work if you destination is obscured, so it's not the fact it's not working properly, it's that you don't understand how it works.

Target station is never obscured when I leave it to do the job. As such I expect it to at least warn me of a problem as soon as it is engaged, rather than at the end when it's too late.

Because bots.
^ This. There are bots in the game with huge magnets that pull you off course.

You can manually tell SC Assist to orbit a planet so it's clearly able to recognize and react to planetary bodies and calculate orbits. Never made much sense that it stupidly flies in a straight path into rings and planets when you set a target for it.

It doesn't know? Like you, it doesn't know until it gets there. It's not changing it's mind, it's not claiming it's not obscured, it's not an autopilot that works the route out.
