Interestingly there are exactly 50 habitat animals in the standard release but "more than 50 animals" if you count either the deluxe animals or the exhibit animals.

Now that we have the full release animal list, I can with certainty that this game has the widest representation of animal taxa in any zoo game to date. It's the only zoo game that has placed a strong emphasis on herptiles and invertebrates. That said, here are the AZA taxa that are not yet represented in the game.

Mammals
Bats
Caprinae - sheep, goats
Deer (Cervid/Tragulid)
Marine Mammals
Marsupials & Monotremes
New World Primates
Rodents, Insectivores, and Lagomorphs

Birds
Anseriformes - ducks, geese, swans
Charadriiformes - shorebirds
Columbiformes - pigeons, doves
Coraciiformes - kingfishers, rollers
Gruiformes - cranes
PACCT (Passerines) - perching birds
Parrots
Penguins
Piciformes - woodpeckers, toucans
Raptors - hawks, eagles, vultures, owls
Turacos/oos

Freshwater Fishes
Marine Fishes
Aquatic Invertebrates

Obviously birds are the least represented group in the current game. This is hardly surprising. I expect flying and swimming animals to be included in later patches or DLC, if they make it in at all. I'm more surprised that the remaining terrestrial mammal taxa had no representation, particularly after the deer sculpture that was included in the scenery pieces.
