For reference: I am a fairly new ED player, and I've only played for around 250 hours or so - I prefer playing with an HMD.
I've been waiting for Odyssey since the moment I started playing Elite Dangerous, and now that it's finally here it's absolutely amazing. The tutorial is perfectly designed, I love station interiors and how detailed outposts are, but the main issue I'm having is lag. Oh, boy, the lag. It's not crazy bad, but it is definitely very annoying to try to play a game with an HMD at 30 FPS. Everywhere except supercruise suffers from this, and based on some videos I've watched FDev has done no performance enhancement whatsoever. According to NVIDIA Insight (software and game development tools) every part of outposts are still loaded whilst you are in space. Even interiors. There's no culling at all (removing objects that are out of your view) and the game really, really suffers from it. I love Odyssey but I can't play the game when it's this laggy.
Some other minor things I don't like is the poor animation quality (especially in the character who guides you in the tutorial), the clunky on-foot "Wheel" UI, and the fact I can't board my FDL through the actual door and instead I need to just magically warp through to the cockpit. Thankfully all of these issues (including the lag issue) can be fixed easily, and hopefully will be fixed very soon.
Apart from those issues, I have one last one - On-foot stuff using an HMD sucks. A lot. You might as well just be using a normal monitor, because that's basically what playing Odyssey is like. I understand why they did this, though: The UI being linked to the player's viewport can be nauseating for a lot of people, however, it completely breaks the immersion. There are other issues with the UI being linked to the player's view too, such as the fact Elite is a sit-down VR game that uses a keyboard and a mouse, and it may be difficult to control your head's position using a mouse, but there needs to be some solution to this problem. Some way we can hybridize having a linked UI and a floating screen in front of you because it just makes me not want to go on foot when I'm playing in VR.
Anyways, I hope FDev can fix these issues. Tell me what you think of these and some solutions to the VR issue.
