I've been doing a lot of exploring in my Sidewinder with it's starting kit plus a fuel scoop, and I'm starting grok the game.

Once I realised you could earn more money by scanning stuff in the star system (just point your target and make sure you're close enough, it's something like 100LS for planets, 20LS for moons and 5LS for asteroid fields), I've been passively scanning them all. The surface scanner is very expensive, but I'm making enough money to keep me happy for the time being.

As for those star systems that just have stars and nothing else, I've found the way to see if there's anything else orbiting those stars. It was at that moment that I realised what is going on in this game. It's been a long time since I've played the original (had it for the speccy), and I've slowly got used to the hand-holding of modern games; the rush to level and jump from quest to quest, following all the signposts on the way. ED is different. Not only do you have to find the quests yourself, but you've also got to learn how to find them in the first place.
