I've been in contact with support about this issue and received the explanation underneath. On console it turns out that this tilting feature is completely missing!
Meaning that you cannot tilt the track when making a turn. So either a turn will keep the track completely horizontal. Or when you for instance use a special track session that ends with the track being tilted, then the track stay tilted that way, no matter what you do. So let's say the track is tilted left after a left special turn. Then even though you straight the track out, it will stay banked / tilted left. So you cannot level out the track in any way. Even when you make a right turn, the track stays backed to the left.
It seems like such a basic feature, so odd how this can be missing entirely. Really hope this will be fixed fast because now it's not possible to make a nice coaster in the right way. Because also unbanked turns will cause way higher G-forces and don't look good anyway!
