Cheated a bit on the basis of taxonomy. Not a fan of dividing canines/felines in two while lumping Old/New world monkeys together and compressing all birds into two categories.

Canine (Dog/wolfs/dog-like): at this point the maned wolf isn't just my most wanted canine, it's my most wanted animal in the general, in fact, it's the only animal that would make me upset if doesn't enter in the game, it's also have a lot of reasons to enter in the game. as honorable mention, i would like the tanuki to enter, mainly to bring more represetation for japan, and also because he is adorable
Vulpine (foxs and fox-likes): the red fox would perfectly compliment for the others two foxes in the game, mainly by being more versatile then the fennec and the arctic, and also is what the majority of person think when it comes to foxes. As honorable mentions, i would like to see the otocion for its peculiarities.
Feline (big cats): at this point the only Big cat i would accept would be the Persian leopard, all the other subspecies of leopard wouldn't add anything and would do the same thing as others cats already do, being the Persian the only one who would add something new and interesting, beyond that other tiger or lion subspecies would just be a wasted slot
Feline (small cats):hard to choose, give that in contrast with the big cats, theres a lot of small cats that would fill a lot of niches still missing, and the fact we doesn't have a true small cat. But if i am suposed to chose just one i would go with the caracal, unique, iconic, and adorable, this "desert lynx" would by a perfect animal for planet zoo. as honorable mentions, i choose the ocelot, Andean cat, fishing cat, sand cat, serval and the Mexican bobcat, all by different reasons.
Ursine : spectacle bear... and that's it, i mean, i don't really think we would need the american black bear or the sloth bear, the american black bear because there's already a bear that do the exact same thing he would do, and we already have 4 bears from Asia, we really don't need another one.
Primates (Apes): the lar gibbon is basically the most wanted primate at this moment, and the mains reason is he popularity and how iconic the animal is, being basically the only correct answer here . beyond that, the siamang is another great choice .
Primates (Monkeys): for me, we definitely need more monkeys from SA, and because of this, plus how much iconic, interesting, magnificent and status of conservation (plus my nationality) the Golden lion tamarin is my choise for this category. but as honorable mentions, i would like others SA primates, like howlers monkeys, spider monkeys and others tamarins, and also African iconic primate: baboons.
Primates (Lemurs): coquerel's sifaka it's the only right answer here. but to be fair, the aye-aye addition would be sick(i know it's not exactly a lemur, but he is more "lemur" then monkey or ape, so whatever).
Mustelid: that one was hard to choose, but the wolverine is my choice from this category: an amazing and magnific animal. And has honorable mention i would like the honey badger to make his way from the game:iconic, beautiful and unique.
Equine (Horse): the Przewalski's horse is my choice here, it's iconic, and it's one of the few animals missing from zt that would be great to have in pz, beyond that is the most wanted animal in the moment (if you consider every leopard subspecies as a separate thing). as honorable mention, an African wild ass, would be a great addition.
Suina/Suidae (Including peccaries as well as pigs/boars): i really don't care so much about swines, but if i have to pick one, it would be the collared peccary, meanly because his american range and being a Tayassuidae in contrast with the two suidaes we already have in game. as honorable mention, the red river hog would be a unique addition, meanly by it appearance, and for opposite reason the boar would be a great addition, mainly by how common the animal is.
Herpestoidia (Moongoose/Hyena/Fossa)
Ground/Non Flying Bird: this one could be break in many other types, and because of this, and the fact that is impossible to me choose one animal in specific for this category, i'm gonna jump it. but as honorable chooses im gonna say: the secretary bird, red legged seriema, rhea, common turkey and kiwi are some animals in this category that i would love to see in pz.
Wading bird: although this category have the same problem as the one above, im gonna pick the Scarlet ibis from this category, mainly because of how beatiful the animal is. and as honorable mention we have the jabiru, marabou, sacred ibis and common pelican, all being iconic animals.
Rodent: African Crested Porcupine, this one wasn't hard.
Marsupial: this one was very hard, but in the end the Tasmania devil seens like the right choice: iconic, highly requested, and in his way, unique. as honorable mention, i would love to see the wombat.
Penniped: this one is a hot take, but the leopard seal is my most wanted penniped: unique, sick looking, and another represetant from antarctic beyond a penguin. as honorable mentions the southern elephant seal and the walrus would be great additions, mainly because look different from what we have.
Bovine (Cows/Buffalo/Bison) : althrough i would like at many more species, mainly because bovines are magnific animals, but at this moment my most wanted bovine is the gaur, the main reasons is how much beautiful and majestic the animal is, and a good representant from india. As honorable mentions the Lowland anoa, wisent and red buffalo would be prefect additions and compliments for the game.
Antelope : in my opinion, we are pretty done with generic african antelopes, sure, i would like the giant eland or the duiker, but i don't think we need much more african antelopes, in the other side, we don't have a asian antelope, and because of this and other reasons the saiga is my chooise from this category. As honorable mentions: the nilgai would be a good animal for the game.
Goats: this one was pretty hard, but in the end the musk ox is my chooise here, mainly because i think the animal is majestic and beatiful. As honorable mention the markhor seens like a pretty interesting animal.
Sheep: the mounflon seens like the only chooice here for me, all the other sheeps woudn't add anything to the game, with the exception of the honorable mention: the domestic sheep.
Cervinae : i would love the roosevelt elk, mainly by how magnific they look and how beautiful they sound, beyond of how iconic it is. As honorable mention the marsh deer, would make a good parallel with the other deers we already have.
Civets: i really don't care about civets, but if i have to choose one i would choose the commom genet
Crocodilian: i think we are pretty done with crocodilians, but to be fair, i still want the nile crocodile, mainly because we still does't have a african crocodile.
Tortoise: in my opinion, just two island tortoises it's really limitant, and because of this i really think we need a smaller and continental tortoise and the perfect option is the yellow footed tortoise, in addition tofilling what i mentioned before, those tortoise are really beautiful and unique. As honorable mentions the scraped tortoise, radiated tortoise and asian forest tortoise are all perfect chooises from the game, and would fill a lot of niches.
Lizard/Monitor: the perentie is my chooise from the last category, the main reasons are the lack of australian animals, and the lack of reptiles from australia in the game. And by last, the honorable mention go to the asian water monitor, mainly because we need a asian monitor beyond the komodo dragon.
