Changing the opening hours determines the hours during which your park is "active". The hours that your park is closed are skipped through in the timeline.
If your park is open from 10 am to 6 pm, the clock in the right corner of the screen immediately jumps to 10 am next morning once 6 pm is reached. This also means your park won't be displayed during nighttime and only in daylight.

Well, it would be kinda strange if people enter and exit the park every 12 minutes.....
The time scale is just a calculation method on which the entire simulation is build.
You are using the park entrance fee I guess? This only works if you have a descent sized park and then the numbers of entering and exiting people will eventually balance out. But closing and opening your park resets this balance.
Really and truly, there's no reason NOT to have your park open 24/7. All you do if you have the park closed for some hours of the day is not make any money during the hours skipped over, so your $/month is less than it could be. So I recommend just setting the opening and closing times to be the exact same, so you maximize your income.
