One Way:
It would be nice to have one way path options. You could use them to direct guest through certain exhibits or create zoo exit paths. For the zoos that I have visited they don't have guests entering and exiting through the same path and it would be nice to create that in Planet Zoo.
Smaller widths:
Simply narrow paths 3m or even 2m on all paths types. We could use to create more intimate areas or rope suspended bridges. I know you can "cheat the system by using the queue paths and forcing regular paths to go smaller but that is such a pain.
Elevation grade:
Add more elevation grade to the path angles. I was watching some tutorials and they made a great point; people like about a 2-3 degree angle when it comes to elevation grade (ADA max allowed is 4.76). Anything greater is "hiking" and not normally what you see at a park. Right now you have flat, about 13-14 degree angle (i compared using track from the monorail to see), and then stairs. It would be nice to add for people that like things to look more realistic.
