Like Luuknoord said, check the messages from leaving unhappy visitors.
Could be a lot of reasons
Btw, what does the lower part of the guest thoughts say? If 10% is unhappy with temperature or too much trash, that could also be an issue.

Could be not able to see their favorite animals
Which could mean they never visited the habitat, not visible in habitat (not enough glass) or an animal species which is not present (anymore) in your zoo but in your trade centre. (or just the wonky AI) :p
Or the welfare of some of your animals is too low. Try to raise that..

Maybe raise education a bit more - try to get most paths covered - not just in front of your exhibit.
In spots where you can't raise education with a normal habitat (too much distance) - you can also place a small exhibit in that spot and add a speaker on top.
In my zoo I've got most paths covered with almost connected circles.

Currently it isn't possible to change this. The Guests that "want" to see a specific Animal often just ignore it and walk past the Enclosure/Exhibit. This happens all the time in my Zoo. Especially in the Reptile-House

Oh yeah, I know.. But it's still a reason why.. And if they are looking for an animal in your trade centre - just place it in a different zoo, maybe that helps.

Yes I have a zoo just for storing animals I am not ready to use in my main zoo. Solves the unhappy because they want to see an animal in the TC issue.

The refund system is frustrating as heck. :( My Zoo that was doing very well up until I downloaded the Arctic Pack is tanking due to refunds. I am having the same issue where all of the unhappy guests are at the exit, and they're just unhappy from not seeing an animal after spending 5 minutes in the zoo.

I just tried playing after a month's absence hoping the problem would be fixable. Nope! I'll keep checking the updates, but this refund system has got to go (or be completely revamped) before I play again. :(

The update and the Arctic pack was in the same period.

Fixing refunds is possible. Recenly able to play my old November Zoo again (loading bug) and the first year had approx. 40k refunds, and a 2-3 years of 20-25k refunds (if i remember correctly),, Lowered it to 2-3k.. And that zoo had a lot of lay-out problems (1st zoo) and was pretty big. (40 species and a lot of notifications).

Personally i think this refund system was alway meant to be in the game, and for the first weeks it was deactivated.

What did you change?

Changed some habitats to add shops in front of them (added a lot of shops),
also tried to add raised paths near/over habitat if possible - to increase visibility for visitors

increased overall animal welfare, selling animals helped a lot. (I think visitors accepted a lower welfare before the update)

added scenery/decorations

added more educational speakers (most/all paths covered)

added more ATM

more caretakers/bins to solve trash problems (not a big issue but in certain crowded areas it happened sometimes)

A lot more security personnel (actually had a lot of pickpockets - which doesn't show up in the guest thoughts menu)

Added some coolers to have a steady normal temperature (especially at crowded spots)

Changed the paths near the entrance, made a square and widened most paths near the entrance (was the worst one to solve)
And added more shops near the entrance.

Added roofing near viewing spots (protection for rain)

Added a few new exhibit species (to fill the empty educational spots)

Added some extra staff buildings (certain areas weren't that effective) / also set staff rooms with the benefit for the staff room set to improve happiness for visitors.

Replaced some generators for solar panels, the negative visitors influence circle was slightly over some paths.

In Short: Most actions were done to lower the negative guest thoughts.
Luckily I had several million $ available to invest, only used approx 200-250k.

It surely can be frustrating. But it keeps you on your toes and makes sure you take everything into consideration when building your zoo. Without these challenges, playing Franchise would be way too easy. And I like trying to play detective and figure out where the issues are. Once you know what to watch out for, it’s really not that difficult to keep refunds low or zero, and when they show up, I check all the usual suspects to find that I maybe forgot to add bins or security cameras in the latest addition or that I need additional shops to feed the growing number of guests.

Make sure you use all the helpful information available! Heatmaps, guests’ thoughts, guests’ intineraries, etc.
And maybe instead of not playing and missing out on the fun, you might want to give Sandbox a try. Maybe that mode corresponds better to your playing style and expectations.

Does adding educational speakers to paths actually do anything?
I tried testing it out myself in a problem area I was having by putting speakers under the path a bit and then watching the education bar on guests to see if it would go up as they walked through the area. Low and behold there was no change that I could see. It only went up if they were actively viewing an animal or education panel for me. Not just walking around.

It seems like this is currently bugged. I had the best possible Education in my Zoo and since a Update (I think the last one or the Update before the last Update) it is really low. The Education Level of my Exhibit Animals is at 0 since this happened and I don't know how to change it
